Whole Wheat Peanut Brittle Bars


  • 1 cup whole wheat flour
  • 1.5 cup(s) all purpose flour 
  • 1 cup brown sugar
  • 1 tsp baking soda
  • ¼ tsp salt 
  • 1 cup butter 
  • 2 cup(s) salted peanuts 
  • 1 cup milk chocolate chips 
  • 300-400g of caramel ice cream topping


  • In a large bowl, combine both types of flour, brown sugar, baking soda, as well as salt. 
  • Add in butter till the mixture becomes coarse and crumbly in texture. 
  • Preheat the oven to 180ºC and grease a baking pan with butter or add baking sheets to avoid sticking. 
  • Pat the mixture into the pan and bake for 10 minutes till golden brown. 
  • Sprinkle peanuts, chocolate chips and other toppings over the warm crust except the caramel ice cream topping. 
  • Combine the caramel topping with some all-purpose flour and drizzle over the other toppings. 
  • Bake for 15 minutes till bubbly and golden brown. 
  • Cool on a rack and serve with your favorite hot beverage to enjoy!
