Ingredients required to prepare the seasoning
After gathering all the required ingredients, Heat a pan over a low flame and dry roast the whole wheat flour until it turns fragrant.
Continue stirring the whole wheat without stopping to roast the whole wheat flour uniformly and to avoid burning. Now transfer the whole wheat flour to another bowl and let it rest so that it can come down to room temperature.
At a low flame, put the pan and add ghee to it. Once it has heated up fully, start adding the ingredients which are given under the seasoning list. Try following the order in which it has been given to enhance the taste. Stir them a bit and allow them to roast and after you see that it is done put them aside
Take another medium-size bowl and add yogurt and a cup of water to make the buttermilk. Stir it well.
In another large mixing bowl add the buttermilk and flour mixture and mix it using a hand whisk. Continue stirring it to form a batter. While you do this, keep adding more water if required so that you can make the mixture to the thickness of an idli batter. Once you feel that the batter is thick enough add the tempering to it and mix it again.
Now add salt just a little bit and allow the batter to rest for approximately 30 minutes. Utilize this time by greasing the Idli plates and also reheat the steamer.
Once you are prepared with everything and the pan is also preheated add ½ teaspoon of Eno's fruit salt and stir well again. This will help you make the batter even lighter and fluffier than before.
Now one by one fill the Idli plates counters with batter and steam the idlis for 20 minutes.
Your whole wheat instant Idli will be ready to be served with coconut chutney and sambar.
