2 cup(s) of apple cider or apple juice (unsweetened)
1 cup of whole wheat flour
1.5 cup(s) of all-purpose flour
2.5 cup(s) brown sugar
½ tsp baking powder
½ tsp baking soda
3-4 tsp salt
¼ tsp nutmeg, cinnamon and cardamom
2 large egg(s)
6 tbsp melted butter
Oil for frying
Sugar for glazing or any toppings of choice (optional)
Directions
In a small saucepan, heat the apple juice or vinegar to boil on a high flame till it is reduced to half, for approximately 10-12 minutes.
Add dry ingredients to a bowl and mix properly.
In a different bowl, whisk the eggs, butter and cooled cider/juice mixture and combine with dry ingredients, till the dough is sticky in nature. Refrigerate for 1 hour.
Divide the dough into 2 pieces, and flatten the dough to reduce its thickness to approximately half an inch. Cut the dough in with a doughnut cutter or a bowl to form the shape of a dough for frying. Make a hole in the centre.
In a deep fryer, heat the oil to 160°C. Fry the doughnuts on each side until golden in colour. Make sure no portion of the doughnut is left uncooked, especially the centre.
Drain the oil on a tissue paper, and glaze with sugar or add your favourite toppings and serve!
